Recipe of the Risotto to the carob bean:

Ingredients: for 4 persons

  • 320 g of brown rice
  • 30 gr of whole wheat flour
  • 10 gr of porcini mushrooms
  • 60 gr of chopped hazelnuts
  • a jar of  natural yogurt whole
  • extra-virgin olive oil d’olive oil
  • salt and pepper
  • a litre of vegetable stock.

Preparazione:

sauté the mushrooms in a little’ s d’oil d’olive oil, then, put the chopped hazelnuts, the flour, and stir well. In a pot put the rice, salt and pepper, and cook with vegetable broth.  At the end of cooking, stir the yogurt risotto.

Recipe Broccoli to the graten:

Ingredients for 6 people

  • a pound of broccoli
  • 2 eggs
  • an onion
  • 300 grams of potatoes
  • 100 gr of pecorino cheese
  • 100 ricotta cheese
  • olive oil’extra virgin olive oil
  • salt, pepper
  • nutmeg.

Preparazione:

Clean and boil the potatoes, wash and dry the broccoli, then slice and boil them in salted water. Mixing well with potatoes and broccoli, put them in a bowl and mix with ricotta cheese, and the metà of the grated cheese. Add the finely chopped onions, the yolks’s egg, salt, pepper and nutmeg. Mix everything and add the beaten egg whites. Place the mixture in a baking pan, seasoned with olive oil and pecorino cheese, then bake in the oven at 200 degrees for a half’now.

Recipe baked Apples with chopped hazelnuts:

Ingredienti:  per 2 persone

  • 2 apples
  • half a tablespoon of fructose
  • 2 tablespoons white wine
  • 2 crumbled amaretti biscuits
  • 100 g of hazelnuts in grain.

Preparazione:

Wash and dry the apples. Put them in a baking dish, inumidendole with the white wine and cook to 160° for about 30 minutes. When the apple peel will be a wrinkled, remove the apples from the oven of choice and roll them with the fructose, the crushed amaretti, and hazelnuts. Enjoy the apples warm, and sprinkled with powdered sugar.
