Omelette of radicchio rosso: the recipe light and delicious

The ingredients for this omelet to the red chicory are: six eggs, two heads of red Treviso radicchio, salt, pepper, a tablespoon of chopped rosemary. The quantities of the ingredients are for four people. The first thing to do is to clean and wash the radicchio and cut it into about four parts, then put on the fire a frying pan causing it to heat. On a pan we then grill the slices of our red chicory and then leave to cool. Thereò cut the radicchio into julienne strips, then in a bowl beat well the eggs and season with salt and pepper. Then add to the eggs, radicchio and rosemary.
